There are a few different forms of 산낙지. One is, as qklilx described, killed before being sliced, with the movement being the result of active nerves (cephlopods have different nervous systems, much more decentralized – octopodes have neurons in their tentacles as well as their brains) and it is their involuntary postmortem contractions that make the dish look alive. But there is also 산낙지 as tellos describes – the same small octopodes served whole and still living . . . or at least close to it. Most restaurants will still take the step of removing the innards before serving, since they have a relatively unpleasant taste.

! I saw that one on reddit!!! I’m not sure I can try live octopus or that fish… maybe I could.

There is a few vidéo on youtube where they eat small octopus alive not chopped. They just stabb the octopus with two chopsticks, quite scary.

I guess it would be easier for me to eat the chopped ones.

I’ll try the next time I go to korea ( I allways say that )

Thanks for the clarification, I guess they call it live because it moves, not because it’s actually living. Either way, if it’s moving that’s going to be interesting … lol

They don’t serve live octopus. They cut it up and the nerves are still active. Not to say you can’t find a place that will serve it to you live…
